Borgo Paludo's dairy was founded in 1923 in Fagagna and nowadays is the oldest in town, the dairy accurately preserved through years the characteristic taste of his products merging together new technologies with tradition.
The unmatched taste of Fagagna's cheese is the result of a wise processing of high quality unpasteurised milk. This cheese can be classified in three types: Fresh Cheese – to taste better the milk flavour, “Mezzano” - to notice an intense taste, Aged Cheese – for the strongest and flavourful.
The recipe of this particular cheese has an 80 years long tradition, all the years of knowledge that Borgo Paludo's dairy had to collect, through cooking and seasons, to completely learn how to produce the cheese well known as “Latteria di Fagagna” (Fagagna's dairy).
